Pasta With Fresh Tomato and Basil Sauce

This pasta with fresh tomatoes and basil sauce is so easy to make! Quick to put together and very little cooking required. Now I got the idea of this dish from a Martha Stewart recipe, Pasta With Fresh Tomato Sauce that is prepared a little different. Martha’s way is uncooked all except for the spaghetti. I wanted my tomato and basil sauce to be warm.

My Version of Pasta with Fresh Tomato and Basil Sauce
To make the sauce, all you need to do is chop up the tomatoes, garlic, basil, and parsley and combine them in a saucepan with hot olive oil and sauté. First, sauté lightly, on low to medium heat stirring frequently, the chopped garlic and sauté until it gives you a nice aroma. Second, add in your chopped tomatoes and basil, parsley and sauté- lightly, just enough, to get nice juices. The sauce cooks quickly so be careful not to overcook. You want your tomatoes to not fall apart. For the pasta, choose a thin noodle like angel hair spaghetti that cooks fast. Drain the pasta, toss it with the sauce for a luscious vegetarian dinner. Don’t forget to top your dish off with a hearty bunch of fresh parmesan cheese.

Ingredients
- 4-5 Roma tomatoes – ripe, possible room temperature
- ¼ cup fresh basil leaves
- 1 tablespoon flat-leaf parsley (dried works)
- 3 cloves of chopped garlic
- 1/4 cup of Extra Virgin Olive Oil plus some for additional for drizzling
- 1/2 pound of Angel Hair pasta or thin spaghetti
- Grated Parmesan cheese, for serving (optional)

Directions
Step 1
Chop tomatoes, herbs, and garlic and sauté in oil. Being careful to not overcook.
Step 2
Cook pasta: Bring a large pot of salted water to a boil. Add pasta, and cook until desired doneness.
Step 3
Drain pasta and top it with the sauce, serving it on a platter or bowl with the sauce.
Step 4
Serve, drizzled with olive oil and topped with parmesan cheese:

Transfer to shallow bowls, and drizzle with olive oil. Serve with parmesan cheese, dinner salad, and French bread.
