Don’t you love to serve a beautiful dessert to friends and family?
So, today I’m serving up my rustic cake. A simple, two-layer yellow cake with my favorite creamy butter cream frosting. Topped with blueberries and raspberries and a few sprigs of lemon thyme.
A perfect summer cake!
I do have a secret. This is a simple box cake, easy as that!
The box cake is what I had on the shelf in my pantry. A quick whipped-up decadent dessert for family and guests.
Simple yellow layers of cake with gobs of ooey – gooey butter cream frosting. Topped with fresh berries, and you don’t have to eat the Lemon Thyme. However, it is an herb and considered safe. Used in many recipes. I just clipped a few sprigs to top my cake.
A Mouth – Watering Creation
I like to call it my ‘rustic’ cake since the sides are a barely there – mostly scraped off frosting. It makes no sense. I know. It just adds some character and rustic charm to coordinate as it is served up on a slab or wood.
Just take a knife and pull that frosting around the cake and then go back over it to scrape most of it off or enough to get your cake layers exposed.
You are frosting the cake and then un-frosting the cake to get that desired rustic look.

By the way… this is homemade butter cream frosting.
Ingredients – Cream Cheese Buttercream Frosting
8 ounces of cream cheese
1/2 cup butter
4 cups powdered sugar
2 teaspoons vanilla extract
Beat the cream cheese, butter until smooth. Slowly add the powdered sugar, vanilla. Beat at a higher speed until smooth, light, and creamy. Stop several times and scrape the sides of the bowl to make sure it is mixing well.
Simple enough and a joy to look at.
You know the sides are somewhat naked with cake exposed.
When I was a kid, my mom loved to bake, and she was good at it. However, if she had made a two-layer cake with this much cake exposed we would have fell over and asked if she had run out of frosting. There were no rustic cakes served at my moms!
