Such a great spring or summer dessert. Perfect for a birthday party, a brunch, any party, or just a perfect slice and self-serve dessert.
An Easter Dessert – Egg Shaped Fruit Pizza
I wanted to make this a dessert fit for an Easter brunch. So, when I rolled out my cookie dough into two large halves, using a sharp knife I trimmed the cookie dough into an egg shape. (Sorry. for some of my directions, I forgot to take photos.)
Fruit Pizza Sugar Cookie Ingredients
- Butter
- Confectioners’ sugar (Powdered sugar)
- 1 Egg
- Vanilla
- Flour
- Baking soda
- Cream of Tarter
- Salt – I added a 1/4 teaspoon of salt to balance out the sweet
For this cookie recipe, I used a Deluxe Sugar Cookie recipe from Better Crocker’s Cookbook

Fruit Pizza Cookies

- 1 egg
- 1 teaspoon vanilla
- 2 1/2 cups all-purpose flour
- 1 teaspoon soda
- 1 teaspoon cream of tarter
- *Note the almond extract was omitted
Mix thoroughly butter, confectioners’ sugar, egg, vanilla using a mixer (In a large mixing bowl or stand mixer, cream butter and sugar on high until light and fluffy, about 3 minutes). (Blend in eggs and vanilla until just incorporated.) Gradually add in flour, soda and cream of tartar mix until combined. Cover; chill for 1 hour. Heat the oven to 400 degrees. Using parchment paper, line your cookie sheet.
Divide the dough into 2 halves. Roll each half out onto a floured surface. Using a sharp knife trim the cookie dough into an egg shape. Using a spatula lift the dough and place on the parchment lined cookie sheet.
Bake for 7 – 8 minutes depending on individual ovens. Allow to cool.
Tips
Fruit pizza cookies can be made in advance. Just refrigerate the iced cookies without fruit. Slice fruits will often bleed or shrivel after a period of time. For a fresher look add the fruit just prior to serving.
Frosting
In a medium mixing bowl or stand mixer, beat cream cheese and confectioners’ sugar together until smooth. Add vanilla and 4 tablespoons of fruit juice; beat until well combined. Spread over cooled pizza cookie crust. Using fruit, fresh or canned decorate the egg-shaped pizza cookie.
