This summer berry-topped cake is a delightful treat with layers of flavor. It’s a simple two-layer yellow cake, generously frosted and finished with fresh store-bought berries and fragrant home-grown lemon thyme. Except for baking the cake, it all only took about 15 minutes to make.

I have a little confession… this is a simple box cake. An easy solution to a fast dessert. This summer berry topped cake is a freshly baked cake. With freshly made not from a can on the shelf frosting and topped with fresh fruit.

A Rustic – Naked Cake
To frost this cake, I started with the top, smoothing out the frosting to keep the edges simple and slightly bare being a little stingy with the so sweet and tasty frosting. Exposed or semi-naked frosting with natural textures and uneven finishes. Toppings include fresh fruits, flowers, or herbs as decoration. All to give the cake a simple, homemade appearance.
